4 large bell peppers

1 can black beans, drained and rinsed

1 cup corn kernels

1 teaspoon chilli powder

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds.

In a bowl, mix together quinoa, black beans, corn, diced tomatoes, cumin, chilli powder, salt, and pepper.

Stuff each bell pepper with the quinoa mixture.

Place the stuffed bell peppers in a baking dish and cover with foil.
